Chef Peter Prime, Cane restaurant host March Taste of America dinner

Three-course dinners available for takeout

Through the James Beard Foundation and Taste America, presented by Capital One, established chefs around the country will be able to build a virtual community, encouraging diners to try three-course meals to go. The program aims to support local restaurants.

Chef Peter Prime, an acclaimed chef in Washington, DC, has his own dinner slated. His Trinidadian eatery Cane won Best New Restaurant of the Year RAMMY award. For $95, customers will be able to pick up a tasty, 3-course meal on March 21.

Here’s what the dinner looks like. According to a James Beard Foundation email, options are subject to change.

An appetizer of Pawpaw and Lobster Chow features Maine Lobster with Ripe Papaya, Avocado, Shallots, Winter Citrus, Garlic, Lime, and Scotch Bonnet. (Contains shellfish; can be made vegetarian.)

Entrees consist of a Snapper Escoveitch, which is a Crispy Whole Snapper with Chadon Beni Sauce, Pickled Peppers, and Coconut Rice. (Contains soy.) and the alternate, and very creative, Herbivore Tiffin Box, featuring Curried Potatoes with Curried Garbanzos, Tomato Choka, Eggplant Choka, and Coconut Paratha. (Vegan, contains gluten; can be made gluten-free.)

A dessert of fresh Coconut Milk Panna Cotta with Benne and Sorrel finishes off the meal. (Vegetarian; contains gelatin and sesame; can be made vegan.)
