Talented Filipino chef to unleash his creativity at Waterfront fave
Tiki TNT will host a Filipino pop-up dinner series each Wednesday in October. Dinner dates, which will be hosted by Chef Paolo Dungca—a Filipino native—will fall on October 7, 14, 21, and 28. Dungca will treat diners to authentic creations, such as Root Vegetables, Pumpkin Ukoy (shrimp fritters) with Cane Vinegar Aioli and Cassava Cake with Honeycrisp Apples and Pecans.
Each Filipino pop-up dinner goes for $65 and features four seasonal dishes inspired by the Philippines. Tiki TNT guests can purchase an optional beverage pairing. A four-course beverage pairing is priced at $35. The waterfront restaurant announced it will take prepaid reservations through Resy.
Dungca trained with Chef Kevin Meehan at Kali Dining in Southern California. Having a keen interest in pan-Asian cooking and trained in classic French cuisine, upscale Filipino and Asian cuisine, he has honed his skills working with local chefs in the Metropolitan Washington area. Here are some of his admirable stints:
- Opening sous chef at Bad Saint with Chef Tom Cunanan
- Chef de cuisine for Chef Cathal Armstrong at Restaurant Eve and Kaliwa
- Opening head chef of ABC Pony by Chef Erik Bruner-Yang
- Currently, R&D team member of Peter Chang Restaurant Group
