Grilled cheese + wings concept emerges at base of convention center
The Shaw neighborhood in Washington, D.C. will see a new restaurant emerge from the space that was previously home to Smoked & Stacked. The TallBoy grilled cheese, wings and beer concept, courtesy of Tin Shop, a restaurant development firm, will open Thursday, March 7. Tin Shop is positioning the concept as an approachable restaurant that will satisfy customers starting with the busy daytime meals and all the way to the late-night hours. TallBoy houses a full bar, with seasonal cocktails on tap, and a robust beer selection.

As for some of the comfort-style meal options, patrons can choose from these standouts:
- Cuban: Swiss, bread and butter pickles, ham, Dijon mustard,
- Kim Cheese: pepper jack, kimchi, and bacon,
- Smoked & Stacked grilled cheese: swiss cheese, pastrami, sauerkraut, and Russian dressing, in a tribute to the former tenant concept, and
- Buffalo wings, which come in Memphis Dry Rub, Old Bay Dry Rub, Lemon Pepper, and General Tso varieties
What’s more, smoked tomato soup will be available for dipping. TallBoy (16-ounce) beer options include Schlitz, Guinness, PBR, Bold Rock Cider, Burly Oak Lost IPA, Union Duckpin, Flying Dog Numero Uno, and Terrapin Hopsecutioner.
“I think delicious comfort food served all day and night, and reasonably priced drinks will be a welcomed addition in Shaw,” said Tin Shop co-founder Peter Bayne.
Said the Tin Shop announcement, “A special menu item, the Tom & Cheese grilled cheese sandwich, serves as a tribute to Tom Marmet, a close friend of Tin Shop co-founder Geoff Dawson. Marmet tragically passed in 2018 as the victim of a stray bullet and a portion of the proceeds of the grilled cheese named after him will be donated to So Others Might Eat (SOME), where Marmet served as a volunteer at the time of his passing.”

Moreover, TallBoy will be part of the retail and dining concepts surrounding the Walter E. Convention Center, enhancing the neighborhood and satisfying hungry diners that patronize the many events, ceremonies and conferences that land at the popular meeting & events venue, in addition to Shaw locals.
“We remain proud to watch our exterior retail tenants evolve, expand and help propel the Shaw community,” said Gregory A. O’Dell, president and chief executive officer of Events DC. The 30-seat restaurant spans 1,200 square feet of space. Wine offerings are available by the glass and are part of a curated selection by former Ripple general manager, Danny Fisher.

Monday – Thursday: 3 p.m. – 2 a.m.
Friday: 3 p.m. – 3 a.m.
Saturday: 12 p.m. – 3 a.m.
Sunday: 12 p.m. – 2 a.m.
